MARMALADE MAKING:-

January is the month when Seville oranges appear in the shops so why not try making your own

marmalade and you will be delighted with the results. This recipe will help you get started.

Ingredients

8 seville oranges

3 sweet oranges

2 lemons 5 litres(9pt) water

4kg (8lb) of preserving sugar

Method

 of January. If you wish to enter send your name, address, guild and Federation to

Halve fruit, extract juice and pips. If pith is thick remove some. Shred peel to thickness required

Put peel, juice and water into pan. Tie pips in a muslin bag, and place in pan and bring to the boil,

then simmer gently for about 2hours, until peel is tender.

Squeeze bag of pips to release any liquid, remove.

Stir warmed sugar in over gentle heat until sugar is dissolved.

Boil rapidly until marmalade is at setting point.

Leave 1 hour to stand, and stir.

Turn into warm, dry jars, seal and label.

Makes 4 -6kg (9 -12lb)
