If you want to try something different this Christmas then get started with Mulled Cider and here is a nice recipe from Bord Bia. You need

2 lemons, sliced and studded with cloves
2litres(4pts) medium-sweet cider
2cinnamon sticks
To prepare. Blend all ingredients over a low heat, leave for about 20 minutes to infuse
Serve hot. 12 -15 glasses.
If you are a non drinker ,you will find a refreshing range of farm-pressed Irish apple juices and flavoured spring water available to you
HOT TIPS FOR LEFTOVERS:-
A few years ago Bord Bia collected some interesting tips from well known Chefs.
Turkey Dover
“Sweat an onion in butter; add to diced left-over turkey and ham, add some stuffing, some left-over mashed potato, parsley, seasoning and thyme. Put a little of the mixture in shop-bought puff pastry, glaze  with a little whisked egg, pop in the oven at 190⁰C for 20 minutes and serve with salad”. By Michael Ryan, Cork.
Post-Christmas  Pâté
“Process together left-over turkey and ham with softened butter; a little brandy, and a little mixed spice. Refrigerate for 15 minutes, serve with toast”. By Gerry Galvin Galway.
DRAMA IN DOON:-
Doon ICA ladies were treated to a great night of fun and entertainment by six of their members who attended Drama Classes sponsored by Limerick VEC .They had an excellent tutor in Karen Fitzgibbon and she brought out the best in everyone. Margaret Anderson , Guild PRO tells us that it is amazing what hidden talent people have and Margaret O Brien, Mary O Connor, Margaret Ryan, Bernie Shanahan, Maria Duggan and Maura O Connell  should be very proud of their performance and commitment. “ It certainly was worth the effort because it was one of the most enjoyable nights Doon ICA has had”. Well done to all.
WELLNESS WORKSHOP:-
An Grianán is running a second Wellness Workshop on Monday Jan. 21st 2013
It is open to all ICA Members and it is concentrating on educating all communities and future generations on mental well ness so that we can break down stigma and bring the message of change to all segments of society.
To understand and promote the Wellness Workshops ICA members are invited to learn more about managing their own mental health while focussing on their own personal development.
SoS will run the special workshop in The Kellogg’s Hall at An Grianán on Mon Jan21st
The cost is €70 per member and the workshop will run from 10am to 5pm with a hot lunch provided to all attendees. If interested contact Central Office at 016680002.
Beannachtaí  na Nollaig daoibh go léir wishing you all a Happy Christmas.
